Some rain during flowering and a couple of chilly frosts made for a dramatic start to the growing season. It did settle though and the summer months were hot and dry, allowing the fruit to ripen and develop flavour. At the time of picking, the fruit was claen, healthy and bursting with luscious and concentrated flavours. 

Pinot Noir fruit parcels were harvested in the cool of the morning, crushed and soaked on skins for 4 hours to develop colour and flavour. The drained juice was settled and racked before starting fermentation. Once the desired sweetness levels were reached, the ferment was cooled and stopped. The wine was then left on yeast lees for several weeks before removing from lees to retain the vibrance of the fruit character. Finally, the wine was fined using traditional methods and finished for bottling.
