Geschichte:Kochen ist eine Konservierungsmethode, bei der Gemüse, Obst oder Fleischprodukte in verschlossenen Gläsern, Dosen oder Flaschen über einen angemessenen Zeitraum auf 80-100 °C erhitzt werden. Dadurch werden Mikroorganismen abgetötet. Beim anschließenden Abkühlen entsteht ein Unterdruck und der Behälter wird hermetisch verschlossen; es verhindert die Entwicklung neuer Mikroorganismen. Die Methode wurde Anfang des 19. Jahrhunderts von dem Franzosen N. Appert erfunden, war ab ca. Jahr 1900 für den Hausgebrauch entwickelt und fand in den 1920er Jahren insbesondere in Haushalten mit hohem Autarkiegrad weite Verbreitung.

Im Haushalt werden Gläser mit losen Deckeln verwendet. Zwischen Deckel und Glas wird ein breiter Gummiring gelegt und das Glas mit einem Metallbügel verschlossen. Zum Kochen gibt es spezielle Kessel mit Thermometer. Während der Zuckerrationierung in den 1940er Jahren war das Kochen von großer Bedeutung, wurde aber in den 1960er Jahren von der Tiefkühlung überholt.
